I got my mom a tempurpedic bed and she likes it, but does not like the foamy, plastic odor.
Will it eventually go away?
Can I get one of those dust mite cover thing to wrap the matress and “seal it” to eliminate the odor?
Will the dust mite cover affect the adjustable component of the bed?

no actually getting a good mattress cover will help with the odor as well as to keep the foam getting the body odor overtime.. it’s always a good investment to get a cover since you paid good money for the mattress.
The problem with foam – which Tempurpedic is, despite their claims – is that it offgasses incredibly strongly for a very long time. It is one of the most unhealthy products you can bring into your home, since you’re lying on top of it breathing the fumes for so many hours every day.
There really is no way to stop this offgassing, as it is a chemical process that will occur no matter what you do.
Contact the manufacturer and ask them for assistance. You do not want to do anything that will void your warranty
